Crock Pot Breakfast Casserole

Well, we did our breakfast crock pot over Saturday night! Unfortunately, I wasn't feeling well a lot of the weekend so we didn't get a chance to do any more than the breakfast one.

This is the second time I've made it and LOVED it each time. There is a bit of prep work and depending when you want it to be ready you may have to get up in the night to turn it on.

I like to prep everything before bed. I make the egg and seasoning mix in a large bowl, put saran wrap on it and throw it in the fridge. I cook and cut the bacon, chop the onions, shred the cheese and layer them with the shredded hashbrowns in the crock pot. Once it's all in there I put the lid on and throw the dish in the fridge. (Side note: I have a 5qt crock pot, anything smaller and you might have to half the recipe!)


We like to enjoy this breakfast as a brunch type meal. So between 9:00 and 10:00 in the morning. So I set an alarm for about 2:30 - 3:00 am. When I get up at 2:30 am I want as little work as possible, which is why I prepped everything before bed. All I have to do is take the crock pot bowl and the egg mixture out of the fridge and pour the egg mixture all over the hashbrowns and the turn it on low for 7 - 8 hours. Now, go back to bed!! 


When I get up in the morning my house smells delicious and breakfast is almost ready to serve. By the time I'm hungry I scoop out some delicious casserole and enjoy. 


See here, my totally pathetic attempt at a breakfast plate. HAH. It was so totally good though and so were the raspberries! I went back for seconds because I'm a little piggy. 


Once I enjoyed a bit of it, I grabbed some great single serving sized tupperware containers and filled them with the remaining. Honestly there would have been even more containers except, as I mentioned before, my husband loves to eat everything. So I have 6 breakfasts ready for any morning I'm feeling lazy. Just throw it in the microwave.

  1. We eat breakfast super early so I think I could prep this before bed and turn it on. Cook time, 7ish hours?
